Grain-Free Chocolate Chip Banana Bread (Paleo Friendly)

I am a huge sucker for not only cooking, but baking too... However with baking usually comes high amounts of sugar, dairy, and grains. Those aren't always a friend to my stomach. I typically prefer to eat mostly grain and dairy free! But I also don't want baking that tastes like I obviously chose the "healthier" or "cleaner" option. I want it to be equally as delicious! Well this banana bread made the cut for sure! So yummy!


3 large bananas - mashed

4 eggs

1 T vanilla

1/4 C oil (light tasting olive or avocado)

1/3 C almond butter

1 C coconut sugar

3 T maple syrup

1 t baking powder

1 t baking soda

1/2 t salt

2 1/2 C almond flour

1/2 C tapioca flour (you could also use arrowroot powder instead)

1/2 t cinnamon (optional)

1/2 C Chocolate Chips (optional)

1. Mix together the first seven ingredients and combine well.

2. Add the remaining ingredients except chocolate chips and combine well.

3. Stir in the chocolate chips.

4. Pour into a greased 9x13 pan.

5. Bake for 30-35 mins at 350 degrees.


**I know that chocolate is arguable when it comes to full paleo recipes, but you can leave it out if you choose! I personally just opt for a dairy free/soy free chocolate chip by Enjoy Life and that suits me just fine!

** I use 9 x 13 for more even cooking. I find grain-free cooking can get really squishy if its too thick, but I'm sure you could experiment using actual loaf pans too!
