Quinoa Chicken Salad


1 C shredded chicken (canned, homemade, or rotisserie)

1/4 C mayo (I used Chosen foods)

2 T yellow mustard

1/4 C dill relish

1 t lemon juice

1/2 t celery seed

1 C cooked tri-color quinoa

1/4 C red onion - diced

salt and pepper to taste


Optional:

1/4 shredded or fine diced carrot

1/4 cup fine diced celery

1/4 C halved red grapes


  1. Mix all of the ingredients together

  2. The longer it sits, the more the flavors combine making it even more delicious.

  3. Serve on a bed of greens, eat with carrot sticks, plain, or with crackers if you choose! My favorite is over greens.

  4. Enjoy.
